SANTOLIN:

Using old world wine making techniques such as wild yeast, whole bunch

battonage and oxidative handling, the wines are then left for up to twelve months

in a selection of French oak barrels (Gillet, Sirugue, Ermitage). This small batch

approach is made with passion showing great respect for the single vineyard sites which lie in the lower

and upper Yarra Valley.

Adrian Santolin. The lineup includes a Pinot Gris, Nero d’Avola and the il Capo red blend. Watch this space

as Adrian will be releasing a 2018 Vermentino and Arneis to complete the Cosa Nostra range.
